I’ve used tower building for this with good effect. There are many variations on the exercise, but the basics are the same: teams are to plan and build the tallest tower in a fixed amount of time using a prescribed set of materials. Spaghetti, drinking straws, index cards, newspaper, copy paper, etc. (Only one of those!). Some important aspects of this for use in building collaboration:
1. One of the team members is assigned role of observer - this person does not actively participate in the tower building.
2. Observers are provided with a checklist of various group dynamic/interaction items they are to watch for and rate throughout the exercise.

Finally, a nice way to debrief this, that also can be a great collaboration tool, is using an After Action Review approach (AAR). There are lots of articles about how to conduct these, including template forms (it’s pretty straightforward and very effective - developed and used by US Military).
